CAMPUS CRAFT BREWeRY 2017
LOOKING TO HONOR WISCONSIN'S RICH MILITARY HISTORY AND THE ANNIVERSARY OF WWI, STUDENTS IN THIS YEAR’S CAMPUS CRAFT BREWERY PROGRAM SET OUT TO BREW AN AMERICAN PALE ALE WORTHY OF THE NAME "RED ARROW." RED ARROW, ALSO KNOWN AS THE 32ND INFANTRY DIVISION, BECAME THE FIRST ALLIED FORCES TO PIERCE THE GERMAN HINDENBURG LINE OF DEFENSE. THEIR ABILITY TO CONSISTENTLY AND SUCCESSFULLY PIERCE ENEMY LINES EARNED THEM THE NAME RED ARROW. THEIR SIGNATURE SHOULDER PATCH - A LINE SHOT THROUGH WITH A RED ARROW - HAS BEEN WORN BY MEMBERS SINCE WWI. THE DIVISION HAS SERVED WITH HONOR FOR 100 YEARS AND IS STILL ACTIVE TODAY.
AFTER WEEKS OF CRAFTING RECIPES, SOURCING INGREDIENTS, AND CONSULTING WITH EXPERTS, STUDENTS FROM UW MADISON’S COLLEGE OF AGRICULTURAL AND LIFE SCIENCES (CALS) PRESENTED THEIR AMERICAN PALE ALE RECIPES TO A PANEL OF EXPERT JUDGES. SHORTLY THEREAFTER, THE ENTIRE CALS CLASS TOOK PART IN A FULL-SCALE PRODUCTION OF THE AMERICAN PALE ALE AT WISCONSIN BREWING COMPANY.
THE BEER WILL BE RELEASED AT THE UW MADISON UNION SOUTH ON APRIL 28 DURING A SPECIAL CELEBRATION. IT WILL BE AVAILABLE FOR PURCHASE THROUGHOUT WISCONSIN ON May 1.
Red Arrow American Pale Ale is made possible by our successful partnerships with UW Madison College of Agriculture and Life Sciences, UW Madison School of Journalism and the Wisconsin Veteran’s Museum. We would like to especially thank the Wisconsin Veteran’s Museum for a guided tour of their museum and for allowing us to photograph WWI and Red Arrow artifacts. Campus Craft Brewery, now in its third year, is a landmark collaboration between the UW Madison College of Agricultural and Life Sciences (CALS) and Wisconsin Brewing Company. Inaugural Red and S’Wheat Caroline are also the products of our Campus Craft Brewery collaboration.

six CALS brewing teams created their individual takes on the assignment, an american wheat ale named (by students) S'wheat caroline. the brews have been judged, and we have a winner! s'wheat caroline IS BEING brewed full scale at wbc and is now available on tap and in bottles and six-packs designed by uw business and design students!
here's to all the students who worked so hard to create an awesome ale, the professors and administrators who made this melding of business and education possible, and to wisconsin, where great ideas like this are always on tap. Cheers!

IN THE SPRING of 2014, WBC brewmaster Kirby Nelson had just finished speaking at the University of Wisconsin’s College of AgriculturAL and Life Sciences (CALS), when he ran into some students fresh out of fermentation class. They had created a milk stout, and offered Kirby a sample of their brew.
“It was very good,” recalls Kirby. “I told them to come out to the brewery and we’d put it in the big tanks.”
that offhand remark turned into an idea that became a groundbreaking collaboration between WBC and the UW: Campus Craft Brewery — a formal fermentation science program that combines CALS lab studies with real-world brewing experience at WBC. CALS and WBC identify a beer style and its traits, Students create their interpretations, and the winning recipe is brewed and distributed across wisconsin by wbc!
ON A COLD JANUARY NIGHT, HUDDLED TOGETHER IN A STEAMY LAB, SIX TEAMS OF STUDENTS GATHERED TO BEGIN CREATING RECIPES AND BREWING THEIR ASSIGNMENT: A RED LAGER.
BUT FIRST, THEY HAD TO SELECT A NAME FOR THE BEER THAT WOULD ULTIMATELY BE CHOSEN. GIVEN THAT THIS EFFORT WOULD MARK THE VERY FIRST BREW OF THE NEW PROGRAM, THEIR CHOICE WAS FITTING:
THREE MONTHS LATER, THOSE SAME STUDENTS WATCHED AS REPRESENTATIVES FROM CALS, WBC, THE GREAT DANE AND MILLER/COORS SAMPLED TRAYS OF THEIR BEERS, JUDGING WHICH ONE BEST MATCHED THE GOAL AS KIRBY DESCRIBED IT:
“IT’S A BEAUTIFUL SUMMER DAY OUT ON THE UNION TERRACE. THE SUN AND SAILBOATS AND PEOPLE ARE OUT, THE LAKE IS SPARKLING, AND THIS BREW IS THE PERFECT COMPANION.”
THE OFFICIAL WINNER THAT DAY? “BREW #3.”
THE TRUE WINNER? ALL OF US, FROM THE TEAMS OF STUDENTS WHO RECEIVED INVALUABLE BREWING EXPERIENCE, TO THE MANY UW DEPARTMENTS AND STUDENTS WHO CREATed LABELS, PACKAGING AND PROMOTIONS, TO ALL THE PEOPLE OF WISCONSIN WHO CAN NOW ENJOY THIS TRULY AWESOME BEER!
